holterman's hamburger bake

I discovered this recipe in "Down on the Farm Cooking" by Doris Streiff, New Glarus, WI.  Her daughter, Nancy, was my college roommate and we were dairy queens together in the 1970s.  In the cookbook, it says “our family’s all-time favorite” so of course I had to make it as we always have plenty of hamburger on hand.  Daphne Holterman, Rosy-Lane Holsteins

ingredients: 

  • 8 ounces noodles 
  •  1 to 1-1/2 pounds Ground Beef 
  •  1 onion, chopped 
  •  15 ounce can tomato sauce 
  • 1 tablespoon sugar 
  •  1/8 tsp garlic salt, or more to taste 
  •  Fresh ground pepper to taste
  •  8 ounces cream cheese, softened 
  •  1 cup sour cream 
  •  1 to 2 cups sharp cheddar cheese

cooking:  

  1. Preheat oven to 350°F. 
  2. Cook the noodles according to package instructions.   
  3. Heat large nonstick skillet over medium heat until hot. Add Ground Beef and onion; cook 12 to 15 minutes, breaking into 1/2-inch crumbles. Remove from skillet with slotted spoon; pour off drippings. Return beef and onions to skillet;  add tomato sauce, sugar, salt and pepper. Stir until combined and simmer about 10 minutes. 

Cook's Tip: Cooking times are for fresh or thoroughly thawed Ground Beef. Ground Beef should be cooked to an internal temperature of 160°F. Color is not a reliable indicator of Ground Beef doneness.

  1. In a seperate bowl, cream together the sour cream and cream cheese.   
  2.  Spray a 2-quart casserole dish with cooking spray or lightly butter.  Layer half the noodles, half the cream cheese mixture and half the ground beef mixture. Repeat layers.  Top with shredded cheese.  Bake in 350°F for 30 min.
